A large handful of parsley

1 tbsp capers, rinsed

4 anchovy fillets

1 tsp Dijon mustard

1 tbsp red wine vinegar

Black pepper

8 tbsp WOW Oil

Method

Chop the parsley, capers and anchovies together on a board until fine.

Scrape into a bowl and stir in the mustard and vinegar.

Stir in the WOW Oil cold, until it is loose enough to spoon.

Grind black pepper over. Serve alongside fish, vegetables or bread, spooned on off the heat.
