400 g cooked green lentils, cooled

200 g cherry tomatoes, halved

1 red onion, diced fine

1 carrot, diced fine

A handful of parsley, chopped

1 tbsp red wine vinegar

Sea salt and black pepper

4 tbsp WOW Oil

Method

Make sure the lentils are properly cool. Warm lentils will cook the dressing.

Combine them with the tomatoes, onion, carrot and parsley.

Season, add the vinegar, and turn everything over.

Pour the WOW Oil in last, unheated, and toss until glossy.
