Mediterranean Chickpea Salad
A refreshing chickpea salad with cucumber, cherry tomatoes, herbs, lemon, and raw olive oil.

What you need
- 400 g canned chickpeas, drained and rinsed
- 250 g cherry tomatoes, halved
- 1 cucumber, diced
- 1 small red onion, finely sliced
- 1 handful flat-leaf parsley, chopped
- 1 handful fresh mint, chopped
- Juice of 1 lemon
- 3 tablespoons WOW Longevity Olive Oil
- Sea salt
- Black pepper
What you do
- Place the chickpeas, tomatoes, cucumber, onion, parsley, and mint in a bowl.
- Add the lemon juice, salt, and pepper.
- Toss gently.
- Add WOW Longevity Olive Oil immediately before serving and toss once more.

Stir the oil through only after the salad is fully prepared.
