Juice of 1 lemon

1 tsp Dijon mustard

1 tsp dried oregano

1 small clove garlic, grated

Sea salt and black pepper

6 tbsp WOW Oil

Method

Whisk the lemon juice, mustard, oregano, garlic, salt and pepper together in a bowl or jar.

Add the WOW Oil in a slow stream, whisking, until it thickens and turns opaque. Everything stays cold.

Taste and adjust the salt.

Keeps three days in the fridge. Shake before use.
