Beetroot & Goat Cheese Salad
Earthy beetroot with goat cheese, walnuts, arugula, lemon, and raw olive oil.

What you need
- 500 g pre-cooked beetroot, cooled and sliced
- 100 g soft goat cheese
- 80 g arugula
- 50 g walnuts
- Juice of ½ lemon
- 3 tablespoons WOW Longevity Olive Oil
- Sea salt
- Black pepper
What you do
- Ensure the beetroot is completely cool.
- Arrange the arugula and beetroot on a serving plate.
- Crumble over the goat cheese.
- Add the walnuts, lemon juice, salt, and pepper.
- Finish with WOW Longevity Olive Oil.
