4 cooked beetroot, cut into wedges

150 g soft goat cheese

50 g walnuts, roughly broken

A handful of rocket

1 tbsp red wine vinegar

1 tsp honey

Sea salt and black pepper

4 tbsp WOW Oil

Method

Whisk the vinegar, honey, salt and pepper together in a small bowl, then whisk in the WOW Oil to make the dressing. Keep it off the heat.

Toss the beetroot in half the dressing.

Lay the rocket on a plate, spoon the beetroot over, and dot the goat cheese around it in rough spoonfuls.

Scatter the walnuts and pour over the rest of the dressing.
